With fall on the way, we’ll all be looking for quick, easy comfort foods that will put a little meat on our bones while sticking to our mantra health is knowledge. My gooey, go-to favorite is Eggplant Parmesan. Without the carb-loaded base of pizza and pasta, we can still enjoy the gift of delicious, melty Parmesan.
Eggplant is loaded with vitamins and minerals but it’s health benefits go way beyond the basics of A to Zinc. Eggplant is an excellent source of fiber and with no fat, six carbs and 27 calories in a cup it will help us stay in fighting shape for winter break, whether it’s Aspen, St. Barts or a staycation with family and friends, we still want to look and feel our best.
This past weekend I tried this amazing recipe from Epicurious for Eggplant Parmesan using panko (Japanese bread crumbs) to add a healthier kick to the crust. I also cut out the red hot pepper flakes because I’m not a fan and substituted mozzarella and the results were just as satisfying.
