Strawberries with Vodka Infused Cream Filling

The 4th of July has always been a time filled with family, laughter, cocktails and cookouts.  Quite often though, there is a knockout fight for the last bite of dessert. Inspired by Bakers Royale, let these treats keep the patriotic peace.

Strawberries with Vodka Infused Cream Filling

A strong antioxidant, strawberries are also anti-inflammatory if consumed at least three times a week.  Add a blueberry on top and you can also improve your memory and slow down the onset of cognitive problems associated with aging. Eaten alone these sweet treats are perfectly healthy, but for a holiday celebration we give you the okay to splurge.

Strawberries with Vodka Infused Cream Filling

Makes roughly 28 pieces:

2 16 oz containers of strawberries
1 pint of blueberries (use same amount as strawberries, enjoy the rest!)
1 cup whipped cream (I used Reddi-wip)
1/2 cup apricot preserves
2 tablespoons vodka

Begin by putting the apricot preserves into a pan and cook on very low heat.  It will break down into a sauce, just make sure to keep stirring.

Step 1
Hull the strawberries and cut off the tips so that they stand straight on your plate.

Step 2
Add 2 tablespoons of vodka to every cup of whipped cream. Mix and fill each strawberry.

Step 3
When the apricot sauce is finished, toss in the blueberries and mix. Place one blueberry on top of each cream filled strawberry.

Serve immediately or make ahead and keep in the fridge for later.

With these vodka infused strawberries, you won’t have to decided between drinks and dessert. Get the best of both worlds with less calories (only eat a few to avoid a caloric hangover).
