doB Berrylicious Beef Sliders




Honestly, I’ve been wanting to shoot the person who invented beef sliders.  A plate of the mini-burgers seems like an evil trick to make me think I’m exercising portion control, when really, I just end up downing double the recommended dose.  After all, I’ve rarely met a bun I didn’t want to swallow, especially with three lined up featuring a slab of meat in the middle.

But easy on the trigger, cowboy.  This recipe for Berrylicious Beef Sliders gives the little patties a healthy makeover with an infusion of blueberries.  The little fruit packs a wallop of goodness, including antioxidants and anti-inflammatory that help prevent premature aging.  So when the lights come up in the club, you don’t end up looking like something the cat drug home.

Get ready to serve up these sliders with much less guilt.  Honestly, I can berry contain myself.

doB Berrylicious Beef Sliders

Serves 12. Serving size 2

Slider Ingredients

2 lbs lean ground beef seasoned to taste with salt & pepper

2 cups Bulgur wheat

2 cups fresh or frozen blueberries

2 cloves garlic

4 tbsp Worcestershire sauce

2 tbsp balsamic vinegar

2 tbsp Dijon mustard

8 oz. goat’s cheese

24 whole-wheat slider buns toasted or not


In a food processor combine berries, garlic, Worcestershire, balsamic, and Dijon.

Blend until well combined and set aside.

Place the wheat in a microwave safe dish and add water, (just enough to cover the top of the wheat).  Cook in the microwave for 4-5 minutes. Until all the moisture is absorbed.  Let stand for 5 minutes.

In a large mixing bowl combine the blueberry mixture, beef and wheat.  Mix well and refrigerate for a least one-hour.  Form paddies approximately 2 ½ oz. each.  You can cook them on a medium to high grill or pan-fry them.  Cooking time about 2 ½ minutes. each side for medium rare. Place on the buns and top with the onions and crumbled goat cheese. MMMmmmmm I want one right now!

Burgundy glazed onions ingredients

1 large red onion thinly sliced in rings

½ cup burgundy red wines

1/8 tbsp sea salt

½ tsp black pepper

½ tbsp agave nectar


Coat a large sauté pan with butter flavored cooking spray and place on a low to medium high burner.  Add the onions, sea salt, & pepper and cook until the onions are soft and start to turn a light brown. Add the burgundy and cook for another 3 minutes.

Slider sauce ingredients

1 cup Mayonnaise

1 tbsp Worcestershire sauce

1 tbsp Dijon mustard

2 tbsp ketchup


Combine the mayo, mustard, Worcestershire, and ketchup and mix until smooth.

This can be made ahead of time and refrigerated.

Serve it up with doB’s bake fries.
